Fumo. A 96-day pop-up exploring a new, subtly saline approach—where cold meets seasoning—opening new ways to experience ice cream, any time of day.
What is FUMO
Ice cream has been confined to one register for too long—sweet, seasonal, predictable. FUMO proposes a different read: a rigorously crafted, more savory creation where cold becomes a canvas, brought to life through contrasts and unexpected, textured toppings.
Born from a simple observation, FUMO moves beyond the idea of ice cream as a fixed dessert moment. No longer just the end of a meal, it becomes an autonomous food experience—free to be enjoyed before, during, after, or simply on its own, at any time of day.
Collaborations
FUMO is designed as an open platform. Each edition brings in a collaborator—a chef, a beverage creator—whose perspective reshapes what ice cream can mean.
For this inaugural run: pastry chef Tessa Ponzo (Guide Michelin, 2026) creates the recipes. ArchiPel provides the pairings. Together, they define the first chapter.
